Apple Pie Pastries


Now that it's apple season, it's fun to try some new apple recipes. Here's one that I invented last year.
For the crust:
3 c. Flour
1 1/3 c. Shortening (crisco)
2 tsp. Salt
1/2 c. Cold water (very cold)

Mix flour, salt and shortening with pastry cutter.
Mix water in by the tablespoon until dough is kind of sticky and shiny.
Roll out with rolling pin on floured pastry cloth til quite thin, but not thin enough to break. With pizza cutter, cut into 3 1/2 and 4 inch pieces, using the larger pieces for the tops.

For the filling:
6 small apples (I used 2 red delicious, 2 granny smith, and 2 of some sort of local variety)
1 c. Brown sugar
2 tbsp. Flour
1 tbsp. Lemon juice (I use bottled lemon juice)
1 tbsp. +/- apple pie spice (Penzey's is SO good! - the more the better!)

Peel apples and cut into 1/2 inch slices. Mix with other ingredients. Spoon filling onto half of the  pie crust pieces, leaving 1/2-3/4" space on all four edges. Brush edges with beaten egg, and place the tops on. Once they are "sealed" on, press edges down with fork tines.
Bake at 350 for 40 minutes or until crust is fully baked and golden.

Peach-Raspberry Popsicles

What could be better than a popsicle on a hot summer day?! So here's a really yummy recipe that's super tasty, and good for you too!
You will need:
popsicle maker
blender
orange juice
sugar
peaches
raspberries
1:
Peel 2 peaches. Eat half of one of them. (You only need 1 1/2)


2:
Put 1 1/2 peaches in blender with 3/4 cup raspberries, 2/3 cup orange juice and 2 1/2 tablespoons sugar.
Blend until smooth. Note: Taste it and see if it's sweet enough for your liking.
 I strained my popsicle filling just to get some of the raspberry seeds out, but you really don't have to.

Pour into popsicle mold.

4:
Put in the freezer for about 5 hours. I know....it's very hard to wait that long, but it's pretty necessary.

5:
Remove popsicle mold from freezer and let it sit for about 5 minutes. Run hot water on the outside of the mold to loosen. 
6:
Eat it!!

Pink {Cherry} Angel Food Cake and a Pinterest Project!

I made this delicious cake yesterday, and couldn't help taking a picture of it!!  
I used one Duncan Hines Angel Food Cake mix, substituting 3/4 c. of water for maraschino cherry juice. Add the remaining 1/2 c. of water. Bake as directed.
For the whipped cream:
Use heavy whipping cream, adding 1/4 c. cocoa and 1/2 c. confectioner's sugar. Beat on high until almost "set." Add 1/2 tsp. vanilla. Finish beating cream. Note: you may need more sugar - go by the taste.
For the cherries:
Melt 1 cup semi-sweet chocolate chips with 5 tablespoons of butter. Drain about 25 cherries. Coat the cherries with chocolate, and put them on a sheet of wax paper. Freeze until ready to use. 
For the piped chocolate:
Use the remaining melted chocolate from the cherries. Put in a ziploc bag and cut a very small hole in the corner. Now just pipe to your heart's content!! (Make sure you pipe onto wax paper or you won't be able to get it off!!) There is no right or wrong way to do it - just kinda whatever you feel like!! Freeze until ready to use.

I FINALLY got my dry erase board!!! I got the frame from TJMaxx for $10, and the markers from the store for $2 {clearance...yayy!!}. I highly recommend getting a marker with the eraser on the end - that way you don't have to have a giant one laying around someplace. I'm not very happy with the paper behind (a drawing made by yours truly ~ this reveals how h-o-r-r-i-b-l-e of an artist I am), but I haven't been able to find paper big enough. The frame is 11x14, so scrapbook paper doesn't fit. I will have to find a piece of {chevron} wallpaper. {It's GOT to be chevron, right?!!} Anyway, all in all, I got another Pinterest Project done!! Only three more to go as you can see below.
